Queen of Indian Desserts - Jalebi 

Have you remember those hot hot jalebis from famous halwai's  from our particular town (every town,city has famous Halwai),and those rainy morning or evening with hot Samosa's and equally hot jalebis that our papa or grandpa used to bring in childhood. Ahaha ๐Ÿ˜›  but since we came to live here we started missing it.we get it here also but not that kinda of hot  and fresh one as we can get it there.so i decided to make it at home and serve hot !! 




Ingredients:  
0.5 cups plain flour/maida
1 tsp chickpea flour/besan
3 tbsp yogurt/curd
1/2 cup water (add a few more if required to make dosa kinda thick consistency)
1/4 baking powder
1/4 tsp turmeric   

1/4 tsp baking soda

Around  2 cups  oil/desi ghee (For frying)
    Recipe :-
    • Mix all ingredients. 
    • Mix till get a smooth batter without lumps.
    • Store overnight or till 24 hours in warm place covered in airtight container.
    • Use a clean ketchup bottle or zip lock bag.
    • Fill the batter in the bottle or bag.
    • In a wok, heat oil or desi ghee on medium flame (desi ghee gives yum taste ๐Ÿ˜›)
    • Squeeze Jalebis through the bottle or zip lock bag and fry for  3-4 minutes or till gets cooked.Bring out your creativity and make different shapes. ๐Ÿ˜
    • Once the Jalebi looks golden in color, add it directly into sugar or jaggery syrup.
    • Let them sit in for 3 to 4 minutes till they absorb sugary/jaggery syrup and remove in a serving plate.

    1. 1 cup sugar/jaggery 
    2. 2/3 cup water 
    3. Few Saffron strands  
    4. 1 pinch of cardamon powder 
    5. 1/2 lemon juice (use in last) 

    Add all above in sauce pan except lemon juice and boil till it thickens or 1 string consistency . Add squeeze of lemon juice in the end.



    • Serve Hot or cooled one as per choice.  ๐Ÿ˜
