Akshay Tritiya Feast 




My Akshay Tritiya Thali is a typical Maharashtrian Spread which has quintessential Puran Poli (A flat sweet wheat bread made up of chana dal/bengal gram, jaggery, cardamon powder,and saffron stuffing), Aamras ( A ripe mango puree), Katachi Amti ( A thin spicy,sour and sweet tempered Bengal gram curry), Bhat/Rice (Steamed rice), Bhaji (here i made a simple lal bhopla/Butternut squash bhaji) and for sides i made cucumber,onion,curd raita, homemade sweet mango pickle/muramba, coconut, mint, green coriander chutney and masala taak/buttermilk as summer is going on 😊 and for crunchiness i fried urad papad and kurdai (Maharashtrian wheat papad),along with a must salt and lemon wedge(for quick digestion) 😛 














Puran Poli/Sweet lentil Paratha

Ingredients:- for stuffing  "AKA Puran"
1.1 cup chana dal/Bengal gram
2. 1 cup jaggery powdered or grated 
3. 1/4 teaspoon cardamon powder
4. A pinch of keshar/saffron  
5.water to cook


Recipe:

1.Pressure cook or just can cook in big vessel chana dal/Bengal gram with enough  water or around 2 and 1/2 cups for 3 to 4 whistles.(Can adjust water as per requirement as it depend upon dal quality).
2.Once dal is cooked and cool separate water (Save this for later use) and dal then add dal,grated jaggery or powdered one,add saffron,cardamon powder and mix well.
3.Now grind or use strainer to make fine thick paste like consistency.  

Ingredients :- For dough 
1.1 cup wheat flour
2.1 cup plain flour/maida
3.a pinch of salt
4.2 tsp oil
5.water as require
6.1 tsp sugar


Recipe:-

1. In a big bowl add wheat flour,plain flour,salt,1 tsp oil, sugar, and now add water to make soft dough and apply oil once done.and keep aside for 1 hour. 
2. make small ball of dough and rolled it like puri then fill staffing in it and cover it from all sides and make ball out of it.Now dust some flour on board and and rolled the poli/paratha  till u get equal and thin as possible as you can on all sides.
3.Now roast it on hot pan on both sides equally in golden brown color with or without ghee.


Note:- This dough can also be prepared using whole wheat flour instead of 50-50% proportion of wheat flour and plain flour.But if you are beginner the poli/paratha/bread may not come out well enough using only pure wheat flour bcz of low gluten. 


Note:- These super soft fluffy "Puran Poli's" can be eaten as or dunked in milk or my personal favorite : loaded with a generous amount of desi ghee!!!!   Omgggg...... Heaven is here 😂😂😍😍

                                                                       






Lal Bhopla/Butternut Squash bhaji

Ingredients:-
1.1 to 2 cups medium pieces of butternut squash 
2.2 tsp oil 
3.1/2 tsp mustered seeds
4.1/2 tsp jeera/cumin seeds
5.Salt As per taste 
6.Fresh Coriander handful
7 1/2 tsp Sugar
8.1 pinch of asafoetida 
9.1 or 2 medium green chilies 



Recipe 

1. Heat oil and make regular tadka with mustered seeds,jeera/cumin seeds,asafoetida,cut green chili,hing,and add butternut squash pieces add salt,sugar,and coriander and cover till it gets cook.(can check in middle) Once it is soft its done.    




Katachi Amti

Ingredients 
1.1 medium onion 
2.2 tbsp dry coconut 
3.3 to 4 garlic cloves
4.small piece ginger
5.1 tbsp dry coriander seeds
6.1 tsp cumin seeds
7. small ball of tamarind
8. 2 tbsp mixture of dal and jaggery(which we prepared earlier)(AKA → "PURAN")
9. Goda Masala/Kala Masala (Can use garam masala if goda masala not available) 
10.2 tbsp oil
11. Salt As Per Taste 
12.Handful fresh coriander
13.1 tsp red chili powder (Adjust Spiciness as per taste)
14.pinch of turmeric powder 
15.Salt to taste

Recipe 
1.Cut onion lengthwise and add to hot pan with little oil and fry till golden in color.
2.dry roast coconut,coriander seeds ,cumin seeds separately. 
3.Add Roasted Onion,Coconut,Coriander seeds,Cumin seeds,Fresh coriander,ginger,garlic,goda masala to blender and make fine paste with water as required.
4.Hot oil in kadai add red chili powder along with masala paste,turmeric and roast it till oil gets separate now add dal leftover stock (earlier we saved it) add water as per consistency add salt,tamarind paste/pulp ,fresh coriander,and dal+jaggery mixture and stir well and bring a boil and serve hot.  😛
