     Dal Pakwan (A sindhi breakfast delicacy)


Here is recipe which is taught by my Sindhi friend.when i tried it for first time since then it becomes my absolute favorite,after that very often i used to prepared it. 








Ingredients for dal:-

1. 1 cup chana dal/bengal gram
2. 2 to 3 cups water to cook dal

For tempering:-

1. 1 tsp red chili powder
2. 1/4 tsp turmeric powder
3. salt to taste 
4. 1 and 1/2 tsp oil or ghee 
5 fresh coriander chopped handful n few for garnishing
6. 1/3 tsp garam masala
7. 1/2 tsp dry raw mango powder
8. 1/2 tsp cumin seeds
9.small pinch of asafoetida
10. 1 to 2 green chilies cut lengthwise    

Recipe:-

1.Soak chana dal for 4 to 5 hours
2.Once soaked add dal to pressure cooker and 2 to 3 cups of water and let it cook for 3 to    4 whistles and let cool.
3.Once cool add spices( red chili powder,turmeric,garam masala,dry mango powder) and add 1 to 1/2 cups water to make little thick gravy like consistency.
4.In another pan heat oil or ghee add cumin seeds,green chilies,asafoetida, let it crackle then pour this to dal mixture.Add freshly chopped coriander. 

Ingredients for pakwan:-

1.1 cup all purpose maida flour + 1 cup whole wheat flour
2.2 tsp ghee/oil
3.1/2 tsp crushed black paper
4.1/2 tsp crushed cumin seeds
5.1/2 tsp carom seeds
6. water 
7.salt as per  

Recipe:- 

1.In big bowl add all purpose flour + wheat flour
2.Add spices (black pepper+ carom seeds+ cumin seeds)
3.Add oil/ghee
4.Add salt
5.Now add water as required to prepare medium soft dough.
6.Once the dough is ready keep it aside for a 1/2 hour.
7.Now heat oil in kadai  to fry the pakwan just like puri's
8.Take small ball of dough rolled it and prick it with fork all over the pakwan.
9.Add this pakwan to hot oil and fry until crisp n golden in color 
10.Serve hot with dal, freshly chopped onion, tamarind chutney. 

Ingredients for tamarind chutney:-

1. 1/4 cup medium seed less tamarind
2  1/4 cup seedless dates
3  1/2 cup jaggery
4. 1/2 tsp Roasted cumin powder 
5.1/2 tsp Roasted coriander powder
5. Salt to taste 

Recipe:-

Heat pan add tamarind + dates + water bring boil till get soft for at least 5 to 7                 mins.Now add jaggery once the mixture becomes thick add all spice powders,add             salt to taste.Once cool grind this until gets smooth consistency.
Can keep it in refrigerator to use for 10 to 15 days.


Serve with hot pakwan + sindhi dal + chopped onions + lemon wedge + tamarind chutney
